These tasty corn delights are sure to please everyone at the table. A quick and simple entree to put together very easily and goes with just about everything. They are also delicious dipped in a bit of ranch dressing, or your personal favorite dressing or dip. You can also substitute frozen or canned corn for the fresh corn in this recipe; I do this when the fresh corn is no longer in season.

INGREDIENTS:

8 ears of fresh corn - (white, yellow or bi-colored)
1/2 cup diced red pepper
1/2 cup diced green peppers
2 fresh eggs - lightly beaten
1 TBSP sugar
1 tsp salt
1 tsp garlic powder
1/2 tsp cayenne pepper - (optional)
1 TBSP fresh ground pepper
2 tsp baking powder
1 - 1 1/2+ cups flour - (as much as needed to hold batter together)
Canola or vegetable oil for frying

DIRECTIONS:

If you are looking for the absolutely best flavor for you corn fritters the roasting or grilling the corn first is a must. Simply remove the husks and silk from the ears of corn, rub the corn with some olive oil, sprinkle with some black pepper and salt and place on a hot grill and "roast" until caramelized. When ears are cool remove the kernels from the ears and place in a bowl. This process can easily be done in a skillet if you are using kernels. Coat kernels in olive oil and sprinkle with salt and pepper, roast on stove top stirring frequently until caramelized is achieved.

Add the green onions and red peppers to the corn and mix well, stir in beaten eggs. Next, add 1/2-cup flour, sugar, garlic, salt, baking powder, black pepper and cayenne pepper. Now add flour to mixture 1/4 cup at a time, you will want the batter of corn fritters to be a bit sticky not dry. You just want the kernels and veggies to hold together to be dropped into the frying pan by tablespoons. Slightly flatten them after dropping them into the hot oil and cook until golden brown. Allow draining well on a paper towels. Serve hot.
