Yummy Dagwood's


1 1/4 c Flour
1 1/2 c Lightly packed brown sugar
1 1/2 ts Baking powder
1/8 ts Salt
2 lg Room temperature eggs
1/2 c Melted unsalted butter
2 tb Melted unsalted butter
2 ts Vanilla
1/2 c Chopped walnuts

Preheat oven to 350°. and grease an 8" square pan.

Combine dry ingredients. Combine wet ingredients
separately. Make a well in center of flour, pour
in eggs and stir until blended. Stir in nuts.
Spread in pan and bake 35-40 minutes until tests
clean. Cool in pan on rack 1 hour before cutting.

Cabbage and White Bean Soup


1 tb Olive oil
1 tb Butter
1 lg Onion; finely chopped (1c)
2 md Carrotes; peeled, halved
.. lengthwise and thickly
.. sliced crosswise
1 ts Caraway seeds
2 c Chopped green cabbage
2 c Water
1 tb Light brown sugar
1 pt Tomatoes in juice
1 pt White beans; drained
.. and rinsed
1 tb Cider vinegar
1/4 c Parsley; optional

Heat oil and butter in large saucepan over medium
heat. Add onion; sauté 3 minutes. Add carrot and
celery; sauté 3 minutes. Add caraway seeds; cook,
stirring, 1 minute.

Stir in cabbage, water and sugar. Bring to
boiling. Reduce heat to low; cover and simmer 5
minutes. Stir in tomatoes with juice, breaking up
tomatoes with wooden spoon. Cover and simmer 20
minutes.

Add beans and vinegar. Simmer, uncovered, 5
minutes or until heated through. Stir in parsley
if you wish.

Baked Chicken with Carrots & Potatoes


3 lb To 4 cut up fryer
6 Potatoes; peeled and
.. quartered
4 Carrots; peeled
1 c Crushed tomatoes
2 tb Parsley
1 ts Basil
2 Cloves garlic; minced
Salt and pepper to taste
1/4 c Grated Parmesan cheese
3 tb Vegetable oil

Wash chicken and dry. Cover bottom of roasting pan
with oil. Place chicken in pan and arrange
potatoes in between. Sprinkle tomatoes, parsley,
basil, garlic, salt and pepper over chicken and
potatoes/carrots. Lastly, sprinkle with cheese and oil.

Bake at 375° 1 to 1 1/4 hours or until done.

Makes 4 servings

Bread Sticks


2 1/2 c Extra light mix*
1/2 c Corn meal
1/2 c Water
3 tb To 4 sesame seeds

*Separate recipe.

Preheat oven to 400°. Oil baking sheet; set aside.

Mix mix & cornmeal; add water and stir until dough
forms. Knead gently in bowl until dough sticks
together adding a little more water if needed.

Pinch off balls about 1 1/2" in diameter and roll
between palms into cigars about 3 1/2" long.
Moisten slightly with wet hands and roll in sesame
seeds to cover.

Bake on baking sheet about 20 minutes, or until
golden. Serve warm or at room temperature.

Makes about 16 bread sticks.

Best Ever Apple Pie


Pastry for two crust pie
1/2 c Brown sugar; packed
1/4 c Sugar
2 tb Flour
1 ts Cinnamon; ground
1 pn Salt
1 lg Egg
2 tb Water
8 c Apples; sliced
1 tb Lemon juice
1 ts Vanilla extract
2 tb Unsalted butter
1 tb Sugar for crust; optional

The secret to a good apple pie is to use a few
different kinds of apples. When I make it, I use
Granny Smiths, Macs, and Macouns. The object is to
combine sweet and tart, crisp and soft.

1. Preheat oven to 375°.

2. Roll out the crust, line the pie tin leaving a
1 inch overhang.

3. Mix both sugars with the flour, cinnamon and
salt. In another bowl, whisk together the egg and
the water.

4. Toss the apples with the lemon juice, then the
sugar, then the vanilla in a large bowl.

5. Put the apples in the pie crust and dot with
the butter. Brush the edges of the pastry with the
egg glaze. Roll the top pastry thin and lay it
over the apples. Pull the overhang up and over and
crimp edges.

6. Brush the top crust with SOME of the egg glaze.
If you use all of it the crust is going to get
soggy. Cut slits and sprinkle with sugar if
desired.

7. Put the pie on a baking sheet and bake in the
bottom third of the oven until the pastry is
golden and the apples are tender, about 50
minutes. Remove from oven and let sit at least 15
minutes before serving.

Baked Onions


This is so good and very simple , plus these onions are low calorie!

Yield: 1 Servings

4 md Onions
1/4 c Butter; melted
Salt & pepper

Put onions on a tin and bake as for potatoes. When
done, remove skins, pour on butter. Sprinkle with
salt and pepper and serve hot.

The Devil's Food Cake


Yield: 1 Servings

2 c Sugar
1/2 c Shortening or lard
2 Eggs
pn Salt
1/2 c Cocoa
1/2 c Boiling water
1 c Sour milk
1 ts Vanilla
2 1/2 c Flour

Dissolve baking soda in water. Then mix together
all ingredients in the order given. Grease and
flour pans, bake in a 375° degree oven for 45-50
minutes.

For a double chocolate splurge, this luscious chocolate cake is filled and frosted with a chocolate cream cheese frosting, but you can use any frosting you like.

Banana Choc Chip Cake


This cake freezes beautifully, so eat one now and freeze one to enjoy later.

This is not only the ultimate banana bread but also the perfect vehicle for overripe bananas. It is based on a recipe that my mom used to make when my brother and I were growing up.

Ingredients:

2 1/2 cups all-purpose flour (625 ml)
2 tsp baking soda (10 ml)
1/4 tsp salt (1 ml)
1 cup canola oil (250 ml)
2 cups granulated sugar (500 ml)
4 eggs
2 cups mashed ripe bananas (about 4 large) (500 ml)
1 tsp vanilla (5 ml)
1 1/3 cups semisweet chocolate chips (325 ml)
3/4 cup toasted walnuts (optional) 175 (ml)

Preheat oven to 350 F (180 C)

Two 9- by 5-inch (2 L) metal loaf pans, lined with parchment or waxed paper, greased

In a bowl, combine flour, baking soda, and salt.

In a large bowl, using electric mixer, beat oil and sugar. Add eggs, one at a time, beating well after each addition. Add bananas and vanilla, beating well. Add flour mixture, beating just until smooth. Stir in chocolate chips and walnuts, if using.

Spread batter in prepared pans. Bake in preheated oven for 60 to 65 minutes or until a tester inserted into center of cakes comes out clean. Let cakes cool in pans on racks for 15 minutes. Remove from pans and let cool completely on racks.

Yield: 8 servings

Tip: You can easily freeze overripe bananas, skin and all. Just be sure to thaw them before mashing.

Making BANANA cake


The aroma of bananas will permeate your kitchen, tempting you to eat dessert first. Don't give in! This is one cake that's worth getting through a meal for.

Ingredients:

1/2 cup butter
1 1/2 cups sugar
3 large eggs, beaten
3 cups flour, sifted
1/2 teaspoon salt
1/4 teaspoon baking powder
1/2 cup milk
3/4 teaspoon baking soda (add to pureed bananas)
3 pureed bananas, very ripe

Cream Cheese Frosting:

1/2 stick butter, softened
12 oz. cream cheese, softened
1 box powdered sugar (1 lb.)
3 teaspoons vanilla extract

Directions:

1. Preheat oven to 350 degrees F. Grease and flour a 9x13" baking pan or two 9" layer cake pans.

2. Cream butter, sugar and eggs. Sift flour several times, then add the salt and baking powder to the flour.

3. To the creamed butter mixture, add the milk and flour (alternating, beginning and ending with flour).

4. Add vanilla and mashed bananas (with the baking soda added to the bananas) to this mixture.

5. Bake layer cakes (9") for 25-30 minutes, oblong (9x13") for 35-40 minutes.

Frosting Directions:

1. Mix cream cheese and butter until smooth, add sugar and vanilla and blend well. Spread on cooled cake.
