Two days ago I was here thinking about my laziness and how I’ve never made nothing to complete this goal. So I got up, came to the internet and tried to find some easy recipe that I could make without going out to the grocery store.

I decided for sunomono, a kind of cucumber salad that goes well with everything.

In the beginning I felt like it was terrible and that I had used too much vinegar. My mother said it was nice, so I put it on the fridge and waited. Next day in the morning, a surprise. It tasted almost as good as the last one I ate on a japanese meal.

Well. Far from a sushi, but it is definitely a start. :)

I am sure every Filipino loves to eat Lechon Baboy cause this is one of the most popular food which is being prepared throughout the year for any special occasion, during festivals, and specially this holiday season. We had our Church Thanksgiving & Christmas Party last Sunday so we have celebrated it together with this crispy and crunchy lechon! Lechón is a pork dish in several regions of the world, most specifically Spain and its former colonial possessions throughout the world. The word lechón originated from the Spanish term leche (milk); thus lechón refers to a suckling pig that is roasted. Lechón is a popular cuisine in the Philippines, Cuba, Puerto Rico, the Dominican Republic, other Spanish-speaking nations in Latin America, and Spain. The dish features a whole roasted pig cooked over charcoal. Here in the Philippines, lechón is often served with vinegar, lechon sauce (made out of chicken livers or liver pate combined with vinegar, garlic, and pepper), plum sauce, or other sauces, or with other seasonings or accompaniments.The term lechón also came to mean any meat prepared by cooking on a pit, such as lechón baka (roast beef) and lechón manok (roast chicken). There are other Philippine versions of lechón. Lechón kawali involves chopping the meat into small pieces, boiling it, and then frying it. Lechón paksiw involves boiling lechón leftovers in a vinegar mix or lechon sauce, and then stir-frying it along with other ingredients.

Garlic & Lemon Tilapia

4 tilapia fillets (4 oz. each)
1 cup shredded carrots
1 cup sliced mushrooms
2 stalks celery, cut into 1/2 inch thick slices
1/2 cup A1 Steakhouse Marinade for Seafood Roasted Garlic with Lemon

PLACE all ingredients in resealable plastic bag. Seal bag;
turn over several times to evenly coat fish and vegetables with
the marinade. Refrigerate 30 minutes to marinate.

PREHEAT grill to medium-high heat. Spoon fish and
vegetables evenly onto centers of four 18 x 12 inch sheets of
heavy duty foil. Bring up foil sides. Double fold top and ends
to seal each packet, leaving room for heat circulation inside.

GRILL 10 min. or until fish flakes easily with fork. Cut slits in
foil with sharp knife to release steam before opening each
packet. Remove fish and vegetables from packet to serving
plate; drizzle evenly with the reserved liquid from bottom of
packet.

My Version of Pasta Primavera

Pasta Primavera

* 12 ounces farfalle pasta
* 1/4 cup unsalted butter
* 1/2 cup haricots verts (thin tender green beans), ends trimmed
* 1/2 cup thin asparagus tips and stalks, sliced in 1-inch pieces
* 1/2 cup fresh peas
* 1/2 cup white mushrooms, thinly sliced
* Salt and freshly ground black pepper
* 1 cup half-and-half
* 1/2 cup grated Parmesan cheese
* 4 seeded and diced ripe plum tomatoes
* 2 tablespoons snipped fresh chives

In a large pot of boiling salted water, cook the pasta until just tender, about 12 minutes. Drain and set aside.

Melt the butter in a large pot over medium-low heat and quickly sautéthe vegetables until just tender. Do not overcook. Season well with salt and pepper. Add the half-and-half and cook to thicken the sauce, 5 minutes. Season well with pepper. Toss in the drained pasta and sprinkle with Parmesan. Garnish with diced tomatoes and chives or pea shoots, if available. Serve immediately.

Homemade Pork Stew

* 2 pounds boneless pork shoulder, cut in 1 1/2-inch bits
* Salt and pepper
* 6 tablespoons olive oil
* 2 medium onions, diced
* 4 medium carrots, diced
* 2 medium apples, peeled and cut into 1/2-inch pieces
* 2 tablespoons finely minced garlic
* 1 bay leaf
* 1 cup diced canned or fresh tomatoes
* 2 cups chicken broth (bouillon)
* 1 bottle (12 ounces) beer
* 2 tablespoons brown sugar
* Cooked buttered egg noodles

Season the pork with salt and pepper. Heat 4 tablespoons oil in a heavy casserole over medium-high heat. Brown the pork well in batches. Remove to a bowl.

Wipe casserole clean and heat the remaining oil over low heat. Add onions, carrots, and apples. Stir until softened, 10 minutes, adding the garlic in the last 3 minutes. Stir in remaining ingredients except noodles. Return pork and any juices to the casserole.

Bring to a boil. Reduce heat and simmer, partially covered, stirring, until the meat is very tender, about 1 1/2 hours. Discard bay leaf; adjust seasonings. Serve over egg noodles in shallow bowls.

1 lb. fresh shrimp, peeled
1 tbsp. vegetable oil
3 1/2 tbsp. butter
6 tbsp. fresh cilantro, minced
6 tbsp. parsley, minced
4 cloves garlic, minced
4 tbsp. scallions, chopped
1 fresh jalapeno pepper, minced
2 tbsp. cumin
4 tbsp. red salsa

Melt butter and oil in large skillet. Mix all ingredients and stir-fry on high heat until shrimp turns pink and has curled. Serve with rice and (or) tortillas.

I love pizza. i can eat pizza everyday for the rest of my life. i mean it has everything. u can put meat for protein and veggies for vitamins and minerals. also i dont think ill ever get bored of it because of all the different styles and combinations u can do to a pizza.

Heat oven to highest setting possible...
oven stone works well or use oiled pizza pan

INGREDIENTS:

3 cups AP or "00" flour
1 tbsp active dry yeast or 1 cube fresh yeast
1 tsp salt (Kosher works well)
1 tbsp honey
1 1/4 cup water

You can add a couple of tablespoons of olive oil to the water...it's a personal preference thing...to each their own.

Also, if using tomato sauce, add some fresh basil as soon as the pizza comes out of the oven.

THE DOUGH:

Combine flour,salt, and yeast (if using fresh compressed yeast, rub it between your hands to small granular size particles) into mixing bowl or mixer bowl. Add the water-honey mixture to flour and mix to combine: 1) if by hand, until dough ball forms then knead for about 8 to 10 minutes, until soft, smooth dough is formed; 2) if using stand mixer, mix on slow until dough starts to ball-up, then rest dough for 10 minurtes to hydrate, then knead on medium speed, using dough hook, for about 4 to 5 minutes, finish kneading by hand, until soft, smooth dough forms. You can make pizza dough in a food processor: pulse to combine until a dough ball starts to form, then on high for 45 seconds...finish kneading by hand.

FERMENTATION OR RISING:

Pace dough in a clean mixing bowl, cover with plastic wrap and then a kitchen towel, and set asside to ferment/rise until double in bulk (volume); takes from 1 1/2 to 2 hours depending on room temp. After the dough reaches double it size, gently deflate the dough in the bowl, recover and set asside to rise a second time (about 45 minutes).

NOTE: you should now have enough dough for about two 14 inch pizzas. You can deflate the dough, place the dough you don't use into a plastic zip-lock food storage bag and place it into the refrigerator for up to three days: bring to room temp before using and forming.

SHAPING THE DOUGH:

Simply shape the dough on a piece of parchment paper using either your hands or a rolling pin. If you are baking directly on a hearth oven or baking stone, you can leave the parchment paper under the dough...if using a pizza pan, place the shaped dough on the pizza pan, or you can simply shape it on the oiled pizza pan.

TOPPINGS:

You can use anything you want as a topping.

Do not use too much topping: keep it sparce!
And, leave a 1/2 inch exposed dough border around the outer edge.

Typical topping applied in following order:

1. grated mozzarella:sprinkled over dough
2. tomato sauce or pizza sauce, not too much!
3. Par fried (partly cooked) meat; ground chuck and Italian sausage is a good combo: 2/3 chuck and 1/3 Italian sausage.
4. Pizza seasonings sprinkled over you creation
5. Top with chunks of mozzarella and perhaps a little, very little, grated Romano cheese
6. Finish with a sparce dribble of olive oil.

Add any fresh herbs (sweet basil) as soon as it comes out of the oven, plus a little drizzle of olive oil.

BAKING:

@ highest oven setting (7 - 12 minutes) check it out after 5 minutes. It customary for the edges of the dough to slightly char, but do not bune the cheese. NOTE: It will take an oven stone about 45 minutes to come to heat after the oven reaches it temp (so plan on heating the oven about an hour prior to baking).

NOTE: If you use too much topping, the pizza dough may not bake through before the cheese burns.

BRIEF RECAP:

heat oven and oil a pizza pan

1. Combine dough ingredients and knead dough as instructed.
2. Set dough asside to ferment/rise twice.
3. Shape dough and apply toppings
4. Bake @ highest oven temp (450*F to 550*F) for 7 - 12 minutes; check it at 5 minutes.
Baking time will be longer at lower oven temps.

NOTE: You can retard pizza dough (slow rise) by placing it in the refrigerator for a few hours up to a few days; let it come to room temp before shaping. You can also retard fermentation/rising time by using less yeast: 1/3 tsp activde dry yeast will provide a slow rise (about 4 hours); the slower the rise the better the flavor! Retarding overnight in the fridge produces a nice dough too.

Depending on whether you knead by hand or stand mixer or food processor, you time investment, not counting fermentation periods, should be from 5 to 15 minutes.

Good pizza requires two things: a good crust and not too much topping. If the crust (dough) isn't good, the pizza will not be good.

You can easily tweak this pizza formula as you like.

* 20 - 24 chicken wings
* 1 cup soy sauce
* 3/4 cup chopped green onions with tops
* 1/3 cup sugar
* 4 teaspoon salad oil
* 1 clove garlic, crushed
* 1 1/2 teaspoon ground ginger

Directions:

1. Halve the wings and throw away the tips.
2. Blend soy sauce, onions, sugar, oil, garlic and ginger in a large bowl. Add the wings, cover and marinate for 30 minutes.
3. Remove the wings and reserve the marinade. Place the chicken in a shallow pan and baste with the sauce.
4. Bake in 350 degree oven for 15 minutes and turn over, baste again and cook 15 more minutes (This may be made the day before and reserved in refrigerator, covered. Be sure to save some marinade to baste again when reheating in oven).

Omelettes for breakfast

For the tomato:

2 beef tomatoes
1 tbsp olive oil
10 frozen cooked mussels, defrosted
85g/3oz butter, softened
2 tbsp parsley and chives, chopped
1 garlic clove, crushed
pinch cayenne pepper

For the omelette:

30g/1oz butter, softened
1 tbsp parsley and chives, chopped
1 clove garlic, crushed
pinch cayenne pepper
6 eggs, beaten
110g/4oz frozen mixed seafood cocktail, defrosted
2 tbsp Greek yoghurt
2 handfuls fresh herbs, to garnish

Method:


1. Preheat the oven to 220C/425F/Gas 7.

2. Blitz the butter in a food processor with the garlic, herbs and cayenne and season with salt and pepper.

3. Cut a 'lid' off the top of each tomato and scoop out the flesh from inside. Place the tomatoes on a baking sheet, drizzle with oil and bake for 5-6 minutes.

4. Remove from the oven, place the mussels inside the hollowed out tomatoes and cover with most of the herb butter. Return to the oven and cook for another 2-3 minutes.

5. Meanwhile make the omelet. Melt the remaining herb butter in a very hot, medium sized non-stick frying pan until the butter is foaming.

6. Pour the eggs into the pan and stir until they just begin to thicken. Quickly pull the egg that sets away from the sides, tipping the pan to pour the uncooked egg to the sides. Keep the pan moving over the flame.

7. When the egg is lightly set all over add the seafood and yogurt. Fold the omelet by tipping the pan away from you and giving the pan handle a sharp tap with your spare hand to make the omelet flip. Half roll, half slide it out of the pan, onto a warm plate.

8. Serve the omelet on a warm plate, with the roasted tomatoes at each end. Garnish with fresh herbs and serve at once.

4 (6 ounce) fish fillets
1/4 cup mayonnaise
3 tablespoons yellow mustard
1 tablespoon lemon juice
1 tablespoon horseradish

PREPARATION:
Preheat broiler. Oil a broiler pan and arrange fish on it. In small bowl, combine remaining ingredients. Broil fish 4-6" from heat source for 2 minutes, then carefully turn fish and spoon mayonnaise mixture evenly on top. Broil for 2-5 minutes longer until fish flakes when tested with fork and mayonnaise mixture is browned and glazed.

Dilled Fish & Garden Vegetables

4 sheets (12x18” each) Non-Stick Foil (or Spray well with pam)
1 lemon, thinly sliced
4 pollock, cod, sole or flounder fillets (4 to 6 oz. each), thawed
Salt and pepper
1/2 small zucchini, cut in thin strips
1/2 small yellow squash, cut in thin strips
1 medium carrot, cut in thin strips
1 medium onion, cut in thin wedges
1 tsp dried dill weed

PREHEAT oven to 450°F or grill to medium-high.

CENTER several lemon slices on each sheet of Non-Stick Foil with non-stick (dull) side toward food. Place fish on lemon slices. Sprinkle with salt and pepper. Top with zucchini, yellow squash, carrot and onion. Sprinkle dill weed over fish and vegetables.

BRING up foil sides. Double fold top and ends to seal packet, leaving room for heat circulation inside. Repeat to make four packets.

BAKE 15 to 18 minutes on a cookie sheet in oven OR GRILL 8 to 10 minutes in covered grill.

Use this simple court-bouillon to poach any fish -- whole, fillets or steaks.

Ingredients:
1 cup white wine vinegar
1.5 Tbsp salt (optional)
1 onion stuck with 2 cloves
1 rib celery or several leafy tops
1/2 carrot, sliced
6 peppercorns
1 bay leaf
2-3 sprigs parsley
6 cups water
Fish steaks or fillets

Directions:
In a pot (large enough to hold the fish you will cook in the
court-bouillon), combine all ingredients except fish, and bring
to a boil over high heat. Cook at a fast boil for 5 minutes or
until the liquid is slightly reduced and the flavors concentrated.
Lower the heat to a simmer before adding the fish. Measure
the fish at its thickest point to determine the cooking time.
Wrap the fish in cheesecloth or place on a double thickness of
aluminum foil, and lower it into the simmering court bouillon.
Simmer for 10 minutes per inch of thickness. Remove the fish
and place on a heated platter.

Rinse the fillets and shake dry. Combine the cornmeal, salt and pepper on a platter.

Combine the bacon fat and the oil in a large skillet and heat until almost smoking.

Quickly dredge the fish in the cornmeal mixture and carefully lay in the pan, being careful not to crowd.

While the fish browns, transfer the remaining cornmeal mixture to a small bowl and add the onion, flour, baking powder, and milk. Stir until just mixed and somewhat thicker than a batter, but thinner than a dough.

Turn the fish and add the hush-puppy mixture, a tablespoon at a time, to the pan, one for each fillet. Turn the hush puppies as they brown, lowering the heat slightly to allow the hush puppies and fish to cook through.

When the fish and hush puppies are done, transfer them to a hot platter, and garnish with lemon slices.

Serve with sliced tomatoes and onions on a bed of field greens and Hot Potato Salad.

Fish Fillets Italiano

2 tablespoons olive oil
1 onion, thinly sliced
2 cloves garlic, minced
1 (14.5 ounce) can diced tomatoes
1/2 cup black olives, pitted and sliced
1 tablespoon chopped fresh parsley
1/2 cup dry white wine
1 pound cod fillets

In a large frying pan, heat oil over medium heat. Sauté onions
and garlic in olive oil until softened.

Stir in tomatoes, olives, parsley, and wine. Simmer for 5
minutes.

Place fillets in sauce. Simmer for about 5 more minutes, or until fish turns white.

People were surprised that it was actually edible…

I learned that my kitchen has a maximum capacity of about 6. And I need to watch out for people turning the knobs of my mysterious gas stove the wrong way (it has a pilot light and the knob is unmarked and arranged Off-Light-High-Low, so it’s easy to turn it to Low instead of Off).
